Zencart Partial Backup Functio 02.08.08

We had a web developer previously transfer our site to his server from our original server. When he did this, I noticed we no longer were able to do partial back-ups, only full back-ups.
We need a web programmer experienced in the use of Zen Cart to put this function back onto our cpanel so that we can do partial back ups. (The Full Back up can only be used to transfer it from one server to another, as in when changing hosting services, and is not useful for just backing up our work on the site on a regular basis).
Additional to that, we need detailed instructions, perhaps in a phone conversation over skype where you tell me what to do, on how to back up the admin panel as well. We don’t currently know how to do this and it is very important.
The successful programmer will be in communication on a daily basis with us and be able to get this done very swiftly.
